Welcome to El Taller de Franko – a meeting place in Gislaved that we, Franko and Rima, have created around food, culture and community. Enjoy lunch with freshly baked focaccia, fresh salads, dessert and coffee, and come together over tapas, music and events.

We are Francisco Morales and Rima Antanaviciute, the owners of El Taller de Franko in Gislaved.
We want to share who we are, how we think and what we would like to contribute to Gislaved.
We believe El Taller can be more than a restaurant.
We have a kitchen, a venue, years of experience and two different professional backgrounds that complement each other.
I have worked as a chef for around 24 years.
I have worked in many different restaurants and kitchens, including preparing meals for schools and older people.
For me, food is about more than eating.
Food can bring people together, start conversations and create a sense of community.
That is what I want to contribute.
Rima is also an owner of El Taller de Franko.
She has a master’s degree in social pedagogy.
She brings valuable knowledge about people, social relationships, participation and how to create meaningful activities and community.
We complement each other.
I work with the food and the kitchen. Rima brings the social and educational perspective.
Together, we want to explore what we can do for Gislaved.
At El Taller, we prepare lunch and school meals. We also organise events and welcome artists who share their music and creativity with us.
For us, these things belong together: food, music, culture and connections between people. We want to bring people together and create a place where we can meet, share experiences and feel part of a community.
There are already meeting places and activities for older people.
We want to contribute to what is already there and ask:
How can El Taller help make it even better?
Food is one thing we can offer.
For example, we could work with a meeting place at different times of the day.
In the morning, we could offer breakfast: coffee, tea, bread and something simple to eat. Above all, we want to give people a reason to get out, meet others and start the day together.
At midday, we could prepare and deliver a good lunch. Lunch could also be an opportunity to enjoy music or take part in an activity, for example through a partnership with the music school.
In the afternoon, we could offer fika or warm soup with bread. Around the table, there could be room for bingo, music, card games, conversation or simply spending time together.
It does not have to be complicated.
What matters is creating a place where people want to be.
There is another idea that matters to us.
We want to preserve and share older people’s stories, recipes, experiences and knowledge.
Perhaps someone has a recipe that has been in the family for 50 years. We could cook it together.
Someone else may have a story to tell children and young people.
This could create connections between generations.
Older people have so much to teach us, and we want to make room for everything they can contribute.
This is an idea that I, Francisco, have developed together with Rima through El Taller de Franko.
We already have a venue and a professional kitchen.
At certain times during the week, we have space and the opportunity to develop other activities.
That is why we want to explore how El Taller can also serve as a meeting place.
We could organise activities for older people, cooking get-togethers, courses or shared activities for children, young people and older people.
We already have the space.
We want to find the best way to use it.
Our vision begins with listening.
What do the people around us need? What do older people need? What works well, and how can we at El Taller contribute?
We can start simply by trying an activity one or two days a week. If it works well, we can develop it together.
For us, the idea is simple:
Food creates encounters. Encounters create relationships. Relationships create community.
We want to develop this vision together with other people, associations and businesses in Gislaved.

El Taller de Franko, Gislaved.
Since August 2025, we have had the opportunity to prepare meals for Montessorifriskolan Galaxen in Gislaved. This partnership brings us joy and gives us a chance to contribute our knowledge of cooking and social pedagogy.
We want school meals to be a valuable part of the children’s day. Food prepared with care, which children can enjoy and which also sparks their curiosity about ingredients.
We already work with some local producers and use local and organic ingredients, such as potatoes and eggs. We want to keep developing these relationships and gradually bring more ingredients from our local area into the school kitchen.
We have also started growing food on a small scale at El Taller. This year, we made our first attempts at a small kitchen garden and are learning how to care for it and help it grow.
Our idea is to connect this learning with the school, so children can discover where food comes from: how a plant grows, the care it needs and how what we grow eventually ends up on our plates.
We are building this path step by step. We want to learn and grow together with the school, bring cooking and learning together, and keep improving school meals.
We, Francisco and Rima, are behind this work. Francisco brings around 24 years of experience as a chef, including preparing meals for schools and older people. Rima has a master’s degree in social pedagogy and brings knowledge about learning, participation and relationships between people.
Our experience complements each other and shapes our vision: preparing good food and creating opportunities to learn, share experiences and grow together around it.
For me, Francisco, this is a source of pride as a chef. For Rima, with her background in social pedagogy, it is a challenge full of possibilities. We are delighted to contribute and develop this vision together, beginning with Galaxen.
Over time, we would like to work with more schools that share our approach to food and learning.
We welcome schools with a similar vision to contact us. We want to listen to you and explore how we can work together to improve school meals.
